My husband and I are going to Paris on March 16th, from Winnipeg, and leaving on the 26th.
We want to visit Torhout then Brussels in Belgium as well during this time. How does that sound for a short itinerary? It's not too much is it? What must we see?

Ten days about isn't it,, that sounds fine to me,( of course longer is better, but hey take what you can), do you have to spend long in Torhout( is it a family visit or business ) . I would spend the most time in Paris , Brussels only seemed worth a day or two do me( others may disagree).
You will have plenty of time. Brussels dosn't take that much time and can be done in a day. If you want to see more of Belgium, Bruges is much nicer.
I liked the walks that are listed in the rick Steves Paris book. My husband and I followed the walks and then some. Read up on it before the walk so you don't wander the streets with your nose in the book!
Paris is wonderful for wandering the streets and soaking up the atmosphere. My favorite museum is the Musee D'Orsay. When you go there, start on the top level and work your way down. IMO the best artwork is at the top.
Buy the museum pass and follow all the advise on how to beat the crowds and avoid long lines (some museums you can bypass the line with the pass).

If these are your priorities I think you can have a very satisfying trip along these lines.
To be extra smart, arrange to fly home from Brussels.
