We will be in France for a total of 6 days, arriving into Paris for 2days, then thinking of going to the south by train. We'd like to stay 2nights in one town, Perhaps Nimes, Carcassone, or Arles then another night in a nearby town. Then back to Paris for the last night.
Any recommendations for an itinerary to get the most of this short time.

The short time span argues in favor of Provence and against Carcassone and the lovely SW. You have some good options in Provence, many if you rent a car while you are there.
Your trip is short but perhaps you could make the most of it if instead of schlepping back to Paris for the sole purpose of catching a jet you flew home from Marseilles.

Assuming you do not have a car, you could easily spend the entire time in Paris and save a lot of money on transportation cost. If you want to do more than that, I agree with Adam that you should do Paris to Avignon and limit in a van or something similar it to that. There is a lot you can see in Avignon that does not require a car and if you want to see something located outside of Avignon you would have the option of taking a tour during the day from one of the tour van companies.
