I have combed various websites and am finding it really difficult to find vacation apartments in Munich and Salzburg. We are three adults travelling together and on a pretty tight budget. The apartments in August are very expensive. We don't have to be central, are happy using public transport and not looking for anything elaborate.
Hopefully someone in the great travelling population may help us.

Have you tried Homelidays? They're a clearinghouse, so you deal directly with the owners. We've used them successfully in several cities, but not Germany or Austria. A quick check shows half a dozen in the Munich area for about 420 Euro/week and up. Another half dozen are available in the Salzburg area for 340 Euro/week and up. I used the week of 14-21 August as an example, so your actual travel dates may see different availabilities.

We stayed in one of Redo's apartment, by subway it was very close to the center, Redo was a good host, the apartment was nice, clean and close to a little grocery store, the price was very reseanable too. We had no proble with our paypal deposit rest in cash on arrival.

You can try some of the tourism information sites, like salzburg.info. They may have some cheaper options.
