If you are that closed to Colmar, I would suggest stopping there to see the Unterlinden Museum. It's a great museum. Now sure if this would interest you, but I would really like to see Verdun. Regrettably, we had to leave that and Reims off of our France itinerary last year.

Not sure what your interests are, but here's some of my favourite things:
Metz-twice a month there is a huge antique/swap meet. Furniture, books, ornaments, stuff, you never know what you'll find. See the church with Chagall stained glass windows. Strasbourg-Besides the cathedral, the carousel is beautiful. Riquewihr-wine, wine, more wine, just a fabulously cute town. The next town over, Ribeauville, is home to a famous textile factory, Beauville. They have a beautiful store there if you (or someone you know) likes fabric and home-textiles. Verdun, Satin Mihiel, etc. any of the battlefield sites and memorials are just incredible.

If you are into machinery/transportation, Mulhouse has the French national car and train museums, both of which are well worth a visit.

Try the Eco-Musee at Ingelsheim. Has many old Alsace style buildings moved from other locations, nice large resaurant. A little North of Colmar. We ended up spending most of a day there
