Does anyone have any experience using one of these in Europe? Is it safe from pick pockets? Can you feel safe putting your camera in one of these and carrying it on your back?

I have both of his Civita daybags. They are zipper bags. Just wearing it on your back, like any easy open zipper bag, is an invitation to pickpockets if you wear it while on public transport or any time you're not moving.Those times, the bag should be in front of you.
I use either a small lock or a small screw type carabiner to keep the zippers closed. It helps to deter pickpockets.

We have used them for 2 trips, and not had any trouble with others getting into them. When on a train, I carry it in front. It is a great size for day trips, or essentials on a long plane ride.

Like Frank, I have both bags. Never had a problem with them on multiple trips. You have to be careful in crwoded areas (subways, trains, busy tourist sites). Keep the zippers fastened.
