I've checked out the train situation and looks like we would have to change trains 3-4 times along with busing to another train station. What is the possibility of renting a car in Bruges and driving to Bayeux and dropping the car there?

It can be done, but you'll pay a hefty fee for picking up a car in one country and dropping it off in another. See www.autoeurope.com.
