While he didn't have many in the LQ, Thierry at parisbestlodge.com does have at least one I believe and several more in St Germaine, and Marais.

I have rented two apartments in the Latin Quarter - You don't say how many people you are traveling with, but here goes - The first one I stayed in two years ago. It was a great apartment and we (me, husband and young adult daughter) loved staying there. You can find it on vrbo.com #5967. The listing really tells you all you need to know. Not a good place to stay if you have trouble with stairs - it is up 4 flights, but the view makes it worthwhile. The location is good for walking and two metro stops, one on each end of the short street (2 different lines). It is in a real neighborhood that does not feel touristy, but has convenient shops, etc. The owner lives in the U.S. and you pay her in dollars. I highly recommend it. The second one I have rented for next October, so have not personally stayed there yet. I learned about it from Randy from Minneapolis (he posts a lot on this board), and he recommends it. That one is vrbo.com #5586. The apartment doesn't look quite as nice to me, but the location is fantastic. The area is more touristy, but super close to things. You pay in euros. I had to wire transfer the deposit money, which cost me about $45 dollars at my credit union. He also requested a 400 euro cashiers check upon arrival for a security deposit. I did not want to do that, and asked if he would consider a credit card number as a security deposit. He agreed to do that. Not knowing how big a place you need, my recommendation is to check vrbo.com and homeaway.com for renting directly from the owner. Don't be afraid to negotiate. EDIT- Randy beat me to the punch and gave you the same apartment, just a different website. That apartment is also listed on homeaway.com.
