Recommendations 16 days in Spain late July early August

1st trip to Spain. Traveling with 2 teenagers and husband. Flying into Madrid from Paris. 2 days in Madrid, 1 in Toledo. We are renting a car. Our plan is to head north to stay cool and away from tourists. We like to explore areas that are "off the beaten path." Looking for suggestions, recommendations i.e, lodging, itinerary, restaurants, etc. Currently thinking of stopping in Segovia, Avila, Salamanca and hitting the beaches in the Costa Verde, do some hiking in the Picos de Europa near Covadonga and stop in Santander and Bilboa. From Bilboa we will head to Barcelona for 4 days. Suggestions for best driving routes, lodging, etc. are welcome. Thanks, Bethesda, MD
