It's easy to find the top restaurants in Alsace but would love to know some of the smaller, more local places to eat.
We will be exploring for 4 days in August.

De Academie Du Bier (that's roughly the name of it, I may have messed up the prepositions) in Strasbourg is a must visit local place for me every time. It's just a bar, really, but it has cheap and delicious flammkuchen/tarte d'Alsace and an amazing beer selection. Despite being in the old town, English-speaking tourists are rare. It's more of a college kid joint, and the prices reflect that.
