I'd suggest Munich-Stuttgart-Strasbourg-Nice with the last leg being a night train. Leave Munich at 16:23 and arrive in Nice at 09:00. There are also later departure times and different routes that start with a night train leg from Munich and get you to Nice in the afternoon. See the timetables at www.bahn.de. After you get summary timetables for Munich-Nice, click on the arrow to the left of each route to see the connecting points.

Tim has some good advice. The overnight is simple, with lots of choices to stop along the way and arrive later. I did the same run in January. You can also go to Milan and then Cinque Terra and then Nice. Have fun; secure your belongings on the night train.
