Okay, so assume you are flying into and out of Lisbon in November, have 11 days (which doesn't include the two travel days) and will rent a car. Thinking about something like Lisbon > Evora > Seville > Morocco. Too ambitious? Missing something essential? I welcome all comments and suggestions. Thanks!
Morocco is too much and you are only going to find Tangiers probably, (the rental car cannot go). Ensure the hire company are aware you are going to Spain. There are scores of places to visit with a better vibe or interest in Extramadura and western Andalucia compared to what you can find in Morocco, before you have to make your way back. 'Essential' - two or three days in Seville (where the car is not required) and Cordoba less than two hours away.
Also, 'Essential' - slow down!
We are in Portugal now, we really enjoyed Porto. I would give it at least 2 days. The Silver coast is very nice (Nazaré) but might be too cold for beach time. With 11 days i would stick to Portugal only, there is lots to see, food is good, very nice people and so cheap!
