Karen have you looked at tripadvisor.com Nimes forums? On left hand side of forum page they have "Nimes Hotels" click on that and start reading the hotel reveiws. You can then also contact the actual reveiwers with specific questions on the hotel,, I have done this several times, they always get back to you, as I have when people contact me about hotels I have reviewed.
If you have Rick's France guidebook, the best location for Nimes is to sleep in Arles. But if you get Rick's guidebook to Provence, there you will find a specific section on Nimes itself. Rick (in my 2010 copy) recommends a 3, a 2, and a 1* hotel, to give you some variation. The one-star looks good enough for me. It's probably cozier there than in Arles, where I stayed. It's a nice town, with leafy walks to and from the Temple of Diana, the arena, the Maison Carree, and the Castellum water-distribution excavation. It's a good chance to enjoy the area without drowning in tourists.
Castillon du Gard is between Nimes and Avignon, just down the road from Uzes. The Bastide Sainte Anne is a lovely b and b set in an olive orchard. Exquisite breakfast in room facing Pont du Gard. Check it out on tripadvisor.com
