I just toured with Aeon (www.aeontours.com) on New Year's day and it was fabulous. We had a great guide that met us in our hotel lobby that morning to show us the city. Paris is such a fantastic walking city! Have a great trip :-)
We recently did two walking tours in Paris with Sandeman's. One walk was free, just tip the guide what you want. The Monmartre walk was 10 euros, but at the end the guide bought us a drink. No need to reserve, just show up at the proper place and time. I can't compare with other tours I haven't taken, but we were pleased. I didn't want to book ahead because I wanted to be able to decide weather-wise what day would be best.
Please be aware with the Sandeman free tours, where you just tip the guide, that the guides have to pay the company 5€ per person, so make sure you tip more than that.
I'll second Leslie's recommendation on Paris Walks. I took 4 or 5 of their walks when I was there a couple of years ago. I particularly liked the Montmartre walks and the walks in the Marais.
