Thanks...since I am in Paris and going to London, a side trip to Amsterdam is what we are aiming for...would you think Paris to Amsterdam and then to London back to Paris?

The earlier you book the less you pay.
Geographically it would be better to do London-Paris-Amsterdam (or vice versa).

Brussels (or Paris) to Amsterdam:
From Brussels to Amsterdam you can also take the regular IC trains. No advance reservations needed but the journey takes almost an hour longer.
Booking well in advance (up to 120 days allowed) on the NS Hispeed site will get you the best fare for London-Amsterdam. One €50 discount fare ticket will cover you on the Eurostar from London to Brussels and on an IC train from there to Amsterdam. Since no seat reservations are possible on IC trains, you could even stop off in Brussels for a few hours before going on to Amsterdam.
If you do London-Paris-Amsterdam (or vice versa)you won't be backtracking and wasting half a day traveling. It gives you more time to do fun things:)
