Three bedroom apartments in Paris are typically more than $240 per night, and many 2 bedrooms (even ones with a sleeper sofa in the living room) aren't that large. If you have never spent a week with 3 other adults in a 300 to 400 square foot apartment I can assure you it's not that comfortable. Also, apartment rentals usually require an extra deposit the landlord will hold for cleaning/security - and even though he would get that deposit back at the end, he may not have the funds to put up the deposit on the front end.
Besides, how much time does one really spend in their apartment or hotel room when they are in Paris? It's just a place to sleep and take a shower.
