We will be driving from CDG airport (scary in itself) to Beaune and Dijon and then to Marseille and then Nice to drop the car off before taking a train to Genoa and Turino. Any suggestions or helpful hints regarding the car, what to see or where to stay or eat.
In Beaune several years ago and stayed just outside the city gates at Herny VI or some such...nice and parking available. The hospice is well worth seeing, especially the restored painting there. Many great restaurants there as well.
In Marseille, there is challenge in the driving...parking is not abundant either, but I enjoyed that as well.
Friends stayed in Dijon and had trouble locating their hotel..confusing streets, etc.

Since you haven't said how long you're going to take, a few broad comments:
if you've never been to a chateau (which is not a sin), Fontainebleau is just south of Pairs along your way and is one of the best
Dijon before Beaune is slightly faster
it's a shame to bypass Lyon
there's a lot to see in the Rhone area of Provence
carry a bunch of change for when you get in he coins-only line at the toll plazas by accident
The car is of course essential for may of these destinations, but I think it is often a good plan to minimize the time you are saddled with one.
Beaune is actually faster by train (depending on what connections you make), and may be as cheap when you factor in avoided rental, gas & tolls. (You can rent a car in Beaune the next day.)
That said, if you do drive, you might stop along the way at the Fontenay Abbey just outside of Montbard, or Semur-en-Aixois. Of course, it depends on what you like to see and do.
