suggestions for a driving itinerary of 7-8 days with an emphasis of food in mind

For us, the food highlights in northern Spain were Santiago de Compostela and San Sebastian. You could use via Michelin or Google maps to plot a route that includes both cities and research to find stops in between that have things that interest you. A lot depends on where you're flying into and home from.

Thank you. We fly in and out of Madrid and will have a car. Any special foods that you recommend? We have 7 days to poke along so points of interest are welcome too.

One eats PARTICULARLY well in the Spanish provinces of Asturias and Cantabria. Not only can you find fresh seafood/shellfish on the coast, but, inland, you get lots of meats, beans, and very hearty "farmers foods" like "Cocido Montañés" ("Highlander stew") in Cantabria, for example. This is a white bean stew with chorizo, costilla, morcilla & tocino. Mmmmm.. It's SO good - and REQUIRES a long nap afterwards. I just love northern Spain, the great, green scenery, the wonderful food and seafood/fish, and you can't beat their beaches! Enjoy! Saludos, MadridMan @ you-know-where!
