Hi! I am planning a whirlwind trip in the end of May. I would love ideas for day trips and 'can't miss' adventures, and recommendations for hotels and restaurants. We are renting a car, and love the small towns full of wonderful people and sites.
We are planning a night in each city listed: Nice-Cassis-Avignon-Carcaissonne-Toulouse-Biarritz-Bordeaux.

If you are planning to spend just 1 night in these cities, then you do not have time for any day trips.
If you could consider selecting a few places to use as a base for day trips, you’d have adequate time to enjoy your travel. You’ll enjoy these places after the crowds of tourist groups and day trippers are gone. The car gives you the flexibility to get off the beaten path and be on your own time.
By whirlwind are you referring to the (1) night stay idea along with as many places you can get to?
How many nights do you have for your travel?
How'd you pick those places for stops? Are they hard-locked on? What are adventures - - zip lines and kayaks?
You're zipping by small towns that offer what you describe and stopping at places without a whole heck of a lot of merit.
It also sounds like you're committing to using freeways instead of poking around the interesting places. You could hard-push the route in a day. Give us a clue and we can fill up a month along that stretch.
