I am traveling from nice to barcelona on a saturday in august with 4 people. I have seen quotes for over $1,000.pp for airfare. What would be the cheapest, most convient way to make the trip?

The "cheapest" method of travel would probably be via train. However, it's about a 10.5 hour journey so that's not too desirable.
Which airlines were you checking? You might have a look at Vueling as they have flights from Nice to Barcelona listed for about €59 (the fares vary depending on which day you'll be travelling). I believe these prices are all inclusive.
When booking with budget airlines, keep in mind that they usually use a "sliding scale" for prices (cost goes up as the flight fills), tickets are usually non-changeable and non-refundable once booked and baggage limits are VERY restrictive (if you're travelling with lots of heavy luggage, you can expect to get "nicked" with expensive overweight baggage charges).
