What are your interests? Outside of Paris, Nice and the surrounding area have the best art museums in France. Both the Chagall Museum and the Matisse Museum are wonderful! The Orthodox cathedral in Nice is considered to be the best of its kind outside of Russia. You can easily take a bus to nearby perched (hill top) villages like Eze-le-Village or St-Paul de Vence. Antibes has a sandy beach, a walled old town, and the Picasso Museum.
In Nice, you may be interested in going up the "Castle" - it's a park on top of a rock overlooking the bay - lovely sight from there and nice for a little walk. Also interesting and nice is the Olive tree Garden in Cimiez arena. The Russian church is definitely worth seeing. Any trip to a nearby village - Eze is beautiful but you may find it crowded. Less know and without a view over the see but really typical is the village called Tourrette Levens. Villefranche sur Mer and St Jean Cap Ferrat are also very nice. Beaches will be crowded, go early in the morning to best enjoy seaside. Very early in St Jean is a good bet if you want a little swim before it gets too crowded. Antibes is also a good idea, a walk along the old walls is nice. If you go to the Castle in Nice, try it early too, if the sky is clear enough (not too much sea mist) and if you're lucky, you may catch sight of Corsica.
