About 5 minutes walk to the wall at Rothenburg is Haus Karin. Very nice owner. Good breakfast.

Major cities are surrounded by small towns with rooms, often on a connecting railroad. If you have a detailed map, search a few small towns and look them up on Yahoo Germany.
I used to live in a small town near Nürnberg, Rosstal. It is about 19 minutes by train from N.

Rooms there:

I have never roomed there so I can not make a specific recommendation.
Another nice small town is Heilsbronn:

These are just a couple of many.

Pensions are great if you don't need an ensuite bath.
We stayed in Pension Poeschel in Rhotenburg. We were able to park at a parking lot outside the wall a few blocks away. Inside the wall will be more charming but you can probably save a lot staying outside the wall, depending on what you are looking for.
In Munich, I've stayed at several pensions and always had a very nice room at a good price. Parking is harder in Munich, you can look for something further from the city center or plan to pay for parking in a city lot.
I've never stayed in Nurnberg.
i did the exact same trip last year. there are good places to say outside munich by the airport (you can ask the counter at the airport they have good recommendations). i didn't stay overnight at Numberg but Rothenburg yes - the recommended hotels are usuauly at the "front" of the town - you park outside then you walk in and you'll see a lot of places rightaway, but if you pack light you can walk to the back of the town and they have more good places. The only tricky place i found was at wuzburg - the good places are in the town center by the opera house. you can park in a garage and then walk everywhere. in general i never experienced bad palces - biz is very honest in germany.
