I see no one has answered your question yet, so I'm going to suggest you check out the forums on TripAdvisor.com. There are usually some pretty lively discussions on Mallorca over there. They also have a "Things To Do" section you may find useful.

I went last year and stayed just about the same amount of time that you are planning. I was in Palma one night, Cala Santanyi one night, and Puerto Pollenca one night. Cala Santanyi was lovely...I stayed at the Cala Santanyi hotel which was in a beautiful little cove. From there I walked to a quaint little village called Cala Figuera which was beautiful. If you're going for scenic beach/water, then I'd highly recommend both Cala Santanyi and Cala Figuera (no beach, though). I would skip Alcudia and also skip Puerto Pollenca. Puerto Pollenca was very loud at night (complete with people yelling all through the night). However, I did take an amazing boat ride along the coast that left from Puerto Pollenca. One of the local Spaniards also highly recommended Menorca for a beautiful, less "touristy vacation"...(for your next trip, perhaps?)...
