We have one night in Paris and would like to have a great meal. It could be a hole-in-the wall or a fancy place. We just don't want to end up in some disapointing touristy restaurant. Max. price per couple $250 USD range

My splurge restaurant is Au Petite Riche at 25 Rue le Peletier in the 9th Arrondissment. You get excellent food and service in a plush 1880's interior - very Parisian.
