On 10/18, after being in Paris for five days, I will take three days to travel to either destination either via car or train. Where shall I base in Loire Valley and where shall I base in Burgundy? Thanks for your help!

Many choices, but you won't go wrong with Amboise in the Loire or Beaune in Burgundy.
A car is helpful in both places, though you don't need one to get there, or to return to Paris.

I agree completely with Adam. Both the Loire (base in Amboise) and Burgundy (base in Beaune) are beyond wonderful. You can't go wrong with either area.

I didn't make it to Burgundy, but in Amboise the "Tarte au Nougat" was definitely worthy of a return trip.
