We stayed at a wonderful B&B in Castillon du Gard with breathtaking views of the Pont du Gard. From there, I would recommend: Roussillon as the sun sets - breathtaking, Les Baux, St. Remy (Roman ruins and sanitarium where Van Gogh was institutionalized), Saturday market in Uzes, Nimes (amphitheatre), etc. If you have a car, you can day-trip to many places (Arles, Avignon, Orange).
If you like markets, check out the Sunday market at Isle-sur-la-Sorgue. It's great! Buy a market basket to carry you stuff in for the rest of the trip! We also like the town of St. Remy--not too far away.
I'd suggest Perpignan and Collioure; the former is great for at least a day of exploring, particularly the views from the Palais des rois de Majorque, and the latter is a great beach village with wonderful ambiance, great food and culture, and beautiful beaches.
I do not believe in must-do anything but the coastal villages are charming (see Banyuls and Collioure) and the vertiginous haut corbieres (Cathar ruins on tippy steep peaks) are breathtaking.
Best Bed and Breakfast in France: The Stone House Inn, Caux, France!! Small town, great location. Check their web page. Near Peznas and Montpelier.
