We leave next week for 2 weeks in Languedoc & have roughed out an itinerary, but would love to hear your suggestions and favorite places to vist. In addition to the cities, towns, and sites to visit, please include places to eat/drink/shop. We are renting an apartment (no need for hotels) & will have a car, so getting around should be easy. Also, we will end the trip with 1 night in Marseille & want to have a fabulous bouillabaisse dinner -- any suggestions? Thanks!

Languedoc is a huge area and somewhat amorphous in its geographic definition. I suggest Carcassonne and, to the north, Cordes sur Ciel. Both very touristed, but cool midieval sites.
Hi Holly. We went to the Languedoc region this past spring. Our favorite part (probably of the whole France trip) were the Cathar castles on the spines of the Pyranees mtgs a couple hours SE of Carcassone-Peyerpertuse & Queribus. We visited them on our way from Caolliour to Carcassonne. Wow! Must see - mystical, misty, gorgeous.
