Interesting place to stay in the Champagne region

We'll be traveling by car back to Paris from the Mosel region and would like to stop to stay overnight in the Champagne region. We've seen Reims Cathedral before and Tattinger. What other sites and places to stay overnight would you recommend? Thanks!

In addition to Reims, Epernay is another town to sleep in, and the Route de la Champagne described in France 2008 p. 754 is also recommended.
