We can't decide where to go Novmeber. We'll spend a couple days in Paris, but since we've been there before, we'd like to spend the other 8 exploring the countryside somewhere. Any recommendations?
Normandy is beautiful. It is definitely cooler in weather than Paris, so be sure to bring a light or medium-weight jacket. If you are interested in historical places, visit the D-Day museum in Caen. Normandy is very accessible to Paris by train.

Are you thinking of getting a car? If yes, here is a suggestion with a Dordogne focus:
You can train to Chartres - 1 hour - from Montparnasse station (or CDG), visit the cathedral and pick up a rental car. Head to the Loire valley, visit the chateaux for 3-4 days. Then head to the Dordogne another 3-4 days, returning the car locally.
BTW- can easily be done in reverse, with an overnight in Chartres and a car return at the airport.
As for Pau, you can also do an easy 8 days by car just wandering in the area of Pau, Vallée d'Osseau, Bayonne (Biarritz), and San Sebastian. You can certainly go as you wander, with no advance bookings in November for this region... The only issue maybe the cold settling into the mountains at this time.
