Since the IDP is described as being a translation of the Driver's License, are 2 IDPs needed to drive in (say) France and Spain?

No, the IDP has both French and Spanish translations.

One thing to add to Kent's always excellent information, is that each driver will require their own I.D.P. A Passport photo is affixed to the I.D.P., so they're not interchangeable.

They're only good for a year at AAA so if you're thinking about making another trip soon, wait till the last minute so you can use again.

This will be our third trip to Europe and renting a car again. If I am not mistaken rental companies will rent to only one designated driver- for insurance purposes. Am I not correct in this assumption?????

You can add designated drivers to rental cars although the primary driver (the one who signs and pays with their credit card) is probably limited to just one.
