Consider Hotel Amedeus/La Musica. It enjoys a great location so if it is more than you have budgeted, try to find something nearby in the old city. Check tripadvisor.com.

Check out Hostal Patio de Santa Cruz...did not stay there, but checked it out in October and plan to stay there on my next trip.

We were in Seville over New Years last year and used Amedeus. It is not a budget hotel but very nice, great location, and nice breakfast.
