Can anyone recommend a good hotel in Nuremberg that has rooms for three (two adults, one 7 yr old) near the city center? We will be there near Christmastime and for some reason can't seem to find triples. I haven't had this before, but this is our first time in Nuremberg.
Nuremburg is nice, but when we visited we stayed in a Medieval Castle about 20 minute train ride from Nuremburg. Castle Veldenstein sits just next to a train stop so no problems with public transport. I usually stay city center, but this time we ventured for a castle stay. We had a big suite on the top floor with 2 bedrooms. We had 4 people and we all fit quite comfortably in the suite. The included breakfast was typically good and hearty and the best thing was that Castle Veldenstein is dirt cheap! Very nice place and we had a blast.
Hotel Reservation Service is handy to search for rooms for three people, especially with a child.
Use the English name, Nuremberg. Ask for a double room with 2 adults and 1 child. It will ask the child's age and where you want the child to sleep.
The terms on HRS are competitive with and often better than the hotel's own website. The ratings are pretty accurate in my experience. I like the fact that you get a message in return that clearly spells out the terms, in case you must make changes or cancel a reservation.

I just booked a room at the Hotel Elch, near the castle in Nuremburg, also at Christmas time.
I booked a double for 115 EU. They have no charge for children under 14 in the same room and you can pay for an extra bed in the room.
I picked this room for its central location, it's 500 years old, and I learned about thru the RS Germany guidebook. www.hotel-elch.com (click on Union Jack to get English) - there's an email address and I did the reservation via a couple of emails.
The Hotel Victoria has a perfect location and excellent, modern rooms in a vintage building (as well as a great breakfast). When you exit the train station ramp into town, there it is: the first building on the left. No taxi, no walk. This is especially nice when it's cold and icy. The walk downtown is on a pedestrian-only street, and the Christmas market is about 100 yards. We loved it.

We stayed at the Durer Hotel on our Christmas Tour last December. A short walk to the Christmas market and the hotel was lovely. We had a room with 3 separate beds, as opposed to some other hotels that would give us a double bed and then a fold-out couch.
