any thoughts on recommended hotels in Arles? So many appear to be reserved for the long May weekend.

Justine, I'd highly recommend Hotel Le Calendal in Arles. It's located in a great area, within easy walking distance to the Amphitheater and other sights. I'm not sure if they're booked for the May long weekend, but it's worth a try! Happy travels!
We were in France a number of years ago and On Pentecost weekend and Ascention Weekend we had problems finding rooms. Both were a monday and the 4 day weekends were packed especially near the water.
I stayed at Hotel Regence in September. You might try there.
We've enjoyed hotel de l'Ampitheatre several times. Our last stay was in 2006 but I see it's not in Rick's Provence for 2012 (aka ninth edition).
While I did like Le Calendal, I suggest anyone staying there decline the overpriced breakfast, especially if you are there on a Wednesday or Saturday morning and can eat at the market.
We also stayed in the hotel de l'Ampitheatre in 2006 with an RS tour and some rooms had some major maintenance issues. I believe the hotel was removed from the RS books after that. The problems may have been corrected since then.
