There is a collection of books on hiking in France that covers many French regions. It is in French though and available from the usual online vendors: Two of them cover the alps: Les Hautes-Alpes... à pied : 41 promenades & randonnées

Kev Reynolds is an author with multiple books on hiking in the Alps ("walking in the Alps" , "Hut to Hut hiking in the Alps", etc) You could probably get them at the library and spend some time reading them before choosing one to buy. I own a couple, but they are not handy right now, so I cannot tell you how much he covers France. (We bought them for a couple of hiking trips we made in Switzerland and Austria).
