Forgive me, but the first thing that came to mind was Sloppy Joe's in Key West. :-) But since I am assuming you mean in Spain, you might want to see the windmills at Consuegra in La Mancha.

Pamplona. There's a hemingway statue by the bull ring. Also cafe's from "the sun also rises" are still there. Not sure if any of these are "must see" sights. The best tribute to H is to eat well and drink well while in Spain!

Hemingway said Ronda was the most romantic town in Spain. The scene in 'For Whom The Bell Tolls' where many are thrown off a cliff is modeled on the actual incident at the bridge over the gorge.

Alicia,
"Paris Walks" has a walking tour called "Hemingway's Paris" - it's on my to do list. Also, you may want to read "The Paris Wife" by Paula McLain, it's about Hemingway's first wife, Hadley, and their adventures in France and Spain. Have a good time!

Loved the book 'A Paris Wife'. Hemingway went to coastal France too, I cannot recall if it was Nice. There are a number of cafes in Paris where he used to hang out, I cannot recall where I found the info in the past. I love Paris!

Rascafria - Monestario de el Pular the paper for the first edition of Don Quixote was produced there. Good Sheraton hotel is there and the monestary is open for tours. Interesting. In Sevilla you can visit the site of the jail where the book was written, but the jail is no longer there.

Tex, I really like Harry's bar in Venice. It is like stepping back into the 1950s. Great atmosphere. (For those considering a visit: it's expensive.)

Having a 'Bellini' at Harry's Bar in Venice is one of those things you can do once but remember for a lifetime. (But you probably won't just do it once.)

One Bellini at Harry's and I start dreaming about hanging out with Gary Cooper and Ingrid Bergman and writing a blockbuster while staying in a room with a view of the Grand Canal.
Life, she is good.
