Any suggestions for a Michelin * Restaurant in the $100/person range that would not be overly formal (i.e. jacket required). Preferably a rural setting vs town.

In a Michelin star restaurant, it could be you'll feel uncomfortable without a jacket, even if they seat you. The restaurant websites usually don't describe the dress code, you can check and see (it's generally understood by the clientele what the clothing drill is): usually a jacket (generally a tie is not needed), decent shirt, leather shoes, no jeans, the usual clothing drill at the best French restaurants.

I guess I need to decide whether it's worth bringing a jacket and slacks just to eat at one michelin restaurant.

Yes, the French take food, and dressing for it, more seriously than we do. You can go to the restaurant websites and see if they state the dress code. As you probably know, in France a Michelin one star restaurant is a pretty big deal (yes, we've had a couple of comments here to the effect that, "gee, it's only got one star, what's the big deal?)--there are only about 400 one stars in all of France including Paris--that's why I was suggesting caution with respect to clothing. Want to avoid you getting to the restaurant door and being turned away.Another thing to check on their websites is whether they are closed on Mondays, some of the better French restaurants are closed Mondays.
