I was about to say that the center of Rothenburg (odT) is a pedestrian zone and a lot of the hotels are in there, so a lot of times you have to park outside the wall and walk in. Haus Karin is outside, but apparently quite close. Haus Karin looks like a really nice place.
But Gary, I would call Haus Karin a "B&B" (Privatzimmer). I thought you "do not like Bed and Breakfast rooms". Does she accept credit cards?
And, Keli, if you meant Rothenburg ob der Tauber, in Bavaria, you really need to pay attention to that burg/berg thing. They're pronounced differently, bourk and bairk, even though Americans pronounce them both as "Burrg". A Burg is a castle or fortified city; a Berg is a mountain or hill. Note: Würzburg and Nürnberg. It's particularly critical when trying to get tickets on the Bahn or searching for town websites or on Google.
We stayed at the Hotel Goldener Hirsch last fall and thought it was lovely. They had parking a block away from the hotel. I frankly can't remember if we paid for it, but the total cost of the hotel with breakfast was very reasonable and the location was great. I booked it on Booking.com and would highly recommend it.
We stayed at the Hotel Cafe Uhl and they provided a free place to park about half a block away. They are located just inside one of the gates in one of the most photographed/pictured spots in Rothenburg.
I don't know if they are in Rick's current book, but they were in there in the 2005 book.
Two years ago we stayed at the Golden Griffen, a hotel nestled in the heart of town. We had a car and parked right behind the hotel. I don't remember the cost but can say with certainty it was reasonable. The hosts were very gracious.

It is a room in a private home. I am pretty sure she does not accept credit cards. This is the only B&B that we stayed at in the last 4 years of traveling to Germany. We had several recommendations so I was pretty sure that there would be no hard to anticipate "house rules". It was a good stay for my wife and I. My kids were uncomfortable staying in a private home.

We stayed at Pension Poeschel and were happy. We parked in a (free) lot just outside the wall, a couple of blocks from the Pension. When we left, I drove in and loaded my family.
