We are looking for info on hiking trails in the Roussillon/Sault area in Province to see the Lavender fields. Does anyone have any suggestions for us? Also, where could I obtain a hiking map of the area?

Moon's Walking and Eating in Provence might have the info you want. The timing on lavender will be up to you, however. Assuming you've got that right and have a car, you can always drive to where it's blooming in the area.
