Good base for day train trips around SE France

I'm planning on using a one-month Eurailpass to see as much of Europe as I can next April. I have virtually no firm plans but as I read books and surf message boards such as this one, SE France is starting to grow on me! I'd like to see the papal palace in Avignon; the forum in Nimes; ride the Little Yellow Train thru the Pyrenees; ride btwn Nimes and Clermont-Ferrand thru the Cevennes; and walk the ramparts of Carcassonne; among others!!! If I wanted to park myself for several days in a reasonable hostel with decent train connections, what would be some good cities/towns to do more research on? From the map alone, Narbonne seems well positioned on rail lines along the Med as well as to Toulouse, for example. Nimes and Avignon are a bit NE from Perpignan, it seems to me, but could work. I'd really like others' suggestions, even though I'll continue to read and surf myself. Thx in advance...

Avignon to visit destinations around Provence; Perpignan or Toulouse for the Southwest. Or maybe for the SW, which has a less-extensive rail network, you go point-to-point rather than with day trips. (And Carcassonne is great at night.)
