In march, we are planning on taking our three children, ages 16-12 to Paris for a week. We would like suggestions in regards to where would be the best destination/excursion to go for 2 days while there. Normandy area? Should we rent a car or take the train? Any advice would be appreciated!

Depends on your interest. You could take the TGV to Avignon. Your kids would love the ride, and you could enjoy a few hours in the mediterranean sun and visit a very charming and interesting town.
