I am taking my wife and my In-Laws to France for 9 days. We plan 2 nights in Paris, and the rest split up between Loire Valley and Normandy. Any suggestions? I am specifically looking for places to eat that will really reflect that regions specialties.

Just a general tip. Plan your sightseeing very carefully. At this time of year, daylight hours are greatly reduced compared to most of the US, and often, there's a significant amount of fog. These factors won't really affect you in Paris, but it will limit your sightseeing in the Loire and Normandy.
Thanks for the replies and the tips! I am looking to spend around $40 per head per dinner. We will be touring within Normandy and Loire Valley, so any suggestions on restaurants in Rouen, Amien, Mont St Rennes, Lisieux...would be greatly appreciated.
