France is probably not the most tolerant place for gluten-intolerant people when it comes to dining out. However, two good markets available would be the Naturalia Chain with many a shop all across Paris and Thiébault on ave. du Président Wilson. Also, try Asian and Indian or vegitarian dining instead of true french cusine! At the bottom are some web sources, bon appétit!

You will also find such items in the standard grocery - Monoprix for example will carry such items.
Additionally, there are easy ways around in the dining situation - beautiful salads with good protein is often available.
There are less breaded items in typical French cuisine compared to say Italian. There are often vegetables available for example instead of frites (french fries) - usually something fresh and in season. Lots of good proportioned protein - lamb, duck, veal, pork and chicken are very common - beef too.
Also - many of the boulangerie are also carrying salads - so while one has an incredible baguette sandwich the gluten free eater can enough an alternative.
Worse case - McDos also has the typical salad.
