Basic question: After flying overnight into CDG, should we plan on staying one night in Paris before catching a train to Quimper? No, we are not touring Paris this trip. Just beginning research. Looks like we have to take one train to Rennes and catch another to Quimper. We are 2 middle aged women and were concerned about how long to get from CDG to Quimper.

You are so right about not wanting to "hang around" CDG airport - Though there is shopping :) thank you. I will explore the website and get from CDG airport to Paris.

With an early morning arrival at CDG, the fastest way to get to Quimper will be to go into Paris where you can take a TGV directly from Gare Montparnasse to Quimper. To see detailed timetables, go to www.bahn.de and click on the flag drop-down menu for English. Enter Aeroport Paris-Charles de Gaulle TGV as your departure point and Quimper as your arrival point. After you get summary timetables, click on the arrow to the left of each departure time to see the connecting points.
You will see that there is an afternoon TGV that goes from CDG to Rennes where you could connect with a regional train to Quimper; but unless your flight will arrive in the late morning, I'm sure you won't want to hang around the airport all morning waiting for it.
