You can answer all 3 of your questions by clicking here and using the train and driving planning tools provided there.
From Versailles you would need to take the RER into Paris, transfer to the Metro as needed, and depart from either Gare d'Austerlitz or Gare Montparnasse.
If the timing is right (trains are limited), you can take a TGV from CDG to Bordeaux and another train from there to Sarlat. Or you can go into Paris and depart from either Gare d'Austerlitz or Gare Montparnasse (many more departure times).
To see the details, go to www.bahn.de and click on the flag drop-down menu for English. Enter Aeroport Paris-Charles de Gaulle TGV as your departure point and Sarlat as your arrival point. After you get summary timetables, click on the arrow to the left of each departure time to see the connecting points.
We took the TGV to Libourne, near Bordeaux (it's very fast, only 2.5 or 3 hours), then picked up a Hertz car in the train station there for our Dordogne trip.
