Here is the official website of Kaiserslautern Tourism (click on "English", upper right). Under "Hotels and Accommodations" it has both hotels and vacation homes, listing of all properties or search for availabilities at a date. ALL properties show email addresses and website if they have them, so you can contact the place directly.

I have found Hotel Reservation Service an excellent way to research hotels, even if you decide to contact the hotel directly for reservations. http://www.hrs.com/web3/ They are the largest hotel reservation service in Germany. You can sort the hotels by distance from the town center, the railroad station or some tourist sights. Their rating function is limited to people who actually stayed at the hotel with a reservation with HRS and it has been true to my tastes. If you decide to reserve through them, you reserve through their safe website and get a message back outlining your particulars. On the off chance that you need to change or cancel the reservation, it is easy to do through HRS. Finally, I was stationed in the area of Germany (Landstuhl) and much enjoyed my time there.
