We want to take our children back to where they were born in Bitburg Germany and end our trip in Scotland. We have 2 weeks, friends in Frankfurt, retired Military and too many ideas. Any suggestions?

Sounds like a nice trip. Is it a week in each country? If you have just a week in Germany, there is certainly more than enough wonderful sightseeing to keep you occupied right around Bitburg - Trier, Luxembourg, the Mosel villages and castles (Reichsburg in Cochem, Burg Eltz nearby), the Eifel scenery, the nearby Belgian Ardennes with its WW II sites, Monschau (old weavers' village to the north), Aachen, Cologne and the Middle Rhine region, now a protected World Heritage site.
Taking Ryanair from Frankfurt Hahn to Edinburgh is probably your best bet; there are tickets for 25 Euros each plus fees on their site right now for 5/24.

Is the site for Ryanair? That sounds great. I am trying to get more detailed and plan where we will be and when and then decide how much time to spend where. Do you have the site address to purchase those tickets to Edinburgh? I appreciate the advice.
