I did Heidelberg castle on my own, just signed up for the tour when I got there. I did the Romantic Road tour on my own. Except for the lunch stop, the bus only stops a few minutes in each town on the Romantic Road - hardly a comprehensive tour. I just walked up to the Linderhof ticket counter. Hohenschwangau/Neuschwanstein was also just a walkup. Dachau: just took the S-Bahn and bus to the memorial and signed up for a tour. Hohensalzburg was also a walkup ticket. I don't know about a dinner concert or a "Homes combo tour". Finally, Eagles Nest, just take the city bus out to Hintereck and book a bus to the top. I've been most of these places in August and had no wait.

You can find websites for most if not all through Google. I have just found Romantic Road iand the Bus n less than 1 minute

The only place(s) you mentioned where sometimes people get reservations are the Romantic Road coach and for the King's castles. All the information for the castles is at www.hohenschwangau.de. Most places in Germany can be found at www. name.de, like www.linderhof.de. Dachau is little more difficult because it is in German, www.kz-gedenkstaette-dachau.de. Same for Eagles Nest, www.kehlsteinhaus.de.
