For a family of 4 - which would be more economical? The First Capital Connect Train or a Cab? I assume the former, but wanted to check. I think, that the Train is about 30 pounds for all of us. Not sure. So I'm pretty certain that the Train is the way to go. Nonetheless, if anyone has any experience with this, do please share.

Train - no fuss no muss - and guaranteed pricing. I would be astonished if a cab were less. Full disclosure - never use cabs. First Capital Connect - door to door.
The only thing you need to know about is that on weekends the line from Gatwick to St Pancras is closed through central London due to reconstruction work. If you're arriving on Saturday or Sunday it would be best to get the Gatwick Express to Victoria and then tube or taxi to St Pancras.

If you need to go via Victoria on a weekend, take a Southern train. Much cheaper than the Gatwick Express.
.... and the Tube from Victoria to St Pancras is a no-brainer
Unfortunately the tube from Victoria to St. Pancras isn't a no-brainer on the weekend. See http://www.tfl.gov.uk/livetravelnews/planned-works/calendar/default.aspx for planned closures. You may need to take the train (First Capital Connect) to London Bridge and then use the Northern line tube - there don't seem to be any planned works on it.
