Also look at Michelin online and egullet.org. There are also hundreds (thousands?) of blogs that discuss Paris restaurants (I like David Lebowitz and Dorie Greenspan, others like Chocolate and Zucchini). Plus there are great guidebooks like Hungry in Paris (highly recommended) or Patricia Wells guide (a bit outdated but still valuable)...really, the resources for foodies going to Paris are endless.
There was an article several months ago in the travel section of the NY Times that reviewed a few of the better "prix fixe" restaurants in Paris.
