Flamenco is more associated with southern Spain. If headed to Seville I would have further information.

I have been to two Flamenco Tablaos in Madrid. Cafe de las Chinitas. It can be a little pricey, but it did include dinner. You can also pay for the show and a drink. The show can get pretty full if you go on the weekends, so call and make a reservation. The Flamenco show is a more traditional style show with the strumming guitarists and the singers in the background and the dancers upstage. You get group dancers, couples and single dancers. If you are looking for a more modern Flamenco style dancing, Cafe de las Chinitas might not be for you. The other Tablao is Cardamomo. When we went they quoted us a price to enter, which also included a drink. They blinked and I negotiated it down, way down. The show was a more modern show and very good. They had the dancers, the strumming guitarists and a percussionist playing either bongos or a wooden box. The shows can be hit or miss. The night we went to Cafe de las Chinitas, Pepa Carrasco was the featured artist. She had friends and family attending, so she put on an extra special show. The night at Carmamoma, Belen Lopez treated us to about an hour show and she was awesome.
For those who believe the the best shows are in Seville, I respectfully disagree. The big money is in Madrid, so the better dancers elevate to Madrid. It was my experience that you get a mix of tourists and locals experiencing the shows. Spaniards still love and enjoy their national dance and music. Check out Madrid Man's website, watch the little videos he has there, pick any of the five Tablaos he list and go enjoy yourself.

Casa Patas at #10 Canizares, just off of Calle de Atoche (about 3 or 4 blocks from Plaza de Jacinto Benavente). Regardless of what others may say, Madrid is the capital of Spain and provides lots of top entertainment. Bad acts would not survive much longer than a bad soccer team!
