I quite enjoyed Toledo. There is a lot to see there and its very beautiful.
We loved Toledo too, but we spent the night - and were glad we did. It was a very different place once all the crowds of day-trippers cleared out. Magical.
We also loved Segovia and Avila - both are definitely worth a visit.
You could even do Cordoba as a day trip (albeit a slightly long and expensive one) via highs peed train. The Mezquita is easily do-able in just a few hours, and is the primary reason to go to Cordoba.

In 2008 we spent a week in Madrid and did several day trips from from there to:
Toledo;Avila;Segovia;Salamanca;and El Escorial.
If you go to any of the tourist kiosks the staff have transportation schedules to all of those places. It was not stressful in the least.

I'll agree that El Escorial and Segovia are both fantastic destinations and make great daytrips. We weren't able to visit Toledo as originally planned in November, but it should be on the top of anyone's daytrip itinerary IMO. I'll catch it next time.
Toledo, Toledo, Toledo!!! and did I mention Toledo? :D It's my favorite city in Spain and I visited it many times when I was a student in Madrid many moons ago....
We'll be there in May and plan one day trip to Toledo and another to Segovia.
